I can't remember how I stumbled upon your website but Ive been lovin your sous vide adventures. I actually do a chawanmushi in a water bath as well, cooked in an oven a la Creme brulee, which is not that far off from doing sous vide. In my experience you can bring it up to about 75C and it should be more or less set. Love the blog though!

Yikes! Didn't even realize I wrote "fresh". Thanks for spotting that - I actually went with frozen ramen noodles from Sakuraya. They won't be nearly as springy or toothsome, but still make for a decent substitute.

Hi Tim, I buy from the corner stall at Jurong West market. The butcher has great cuts and always spot on with his pork recommendations. If you aren't in that neighborhood, I've also had luck with NTUC finest - they'll often have decent whole slices of belly that you can inspect and choose the best part.

Hi Wen, where did you buy your pork belly? The fats looks so evenly distributed. The ones I bought have lots of fatty layers in between. Thanks. :)

Thanks Stef! Yes I'm very grateful too. That and the fact that men are expected to chip in with taking care of the baby as well. Don't think I would have survived back in those days... =D
